Half Time Session Pale Ale

Instead of the usual orange slices from Mum at half time, how about this bitter orange beer without all the booze that comes with a lot of flavourful pale ales. Enjoy and good luck for the rest of the game! Please note watching a game (or a movie for that matter) is considered a game too!

Ingredients:

  • 1 pouch of Mangrove Jack’s Craft Series London Bitter (1.8kg) – Includes Mangrove Jack’s M79 Burton Ale Yeast
  • 1 Can of Black Rock Unhopped Light Malt Extract
  • 500g of Copper Tun (dry) wheat spray malt
  • 800g of Copper Tun (dry) light spray malt
  • 150g of crushed caramalt (or equivalent)
  • 250g of carapils (or equivalent)
  • 55g of Styrian Goldings hops (NZ)
  • 55g of Motueka hops
  • 55g Pacifica hops
  • Zest of 1 medium sized orange
  • 1 tsp of Copper Tun Irish Moss

Method:

  1. In 6L of water (in a large pot) steep the crashed malts in a grain bag at 75˚C for 25 minutes, stirring occasionally. Remove grain bag and bring liquid to a boil.
  2. Boil for 1 hour adding the Mangrove Jack’s Craft Series – London Bitter and both Copper Tun Dry malt extract packets at the beginning of the boil
  3. After 40 minutes add 25g of Stryian Goldings (NZ) hops
  4. After 45 minutes add the 1 tsp of Irish Moss
  5. After 50 minutes of boiling add 10g of each of Styrian Goldings, Motueka and Pacifica hops as well as the orange zest
  6. After 1 hour of boiling add 20g of each Styrian Goldings, Motueka and Pacifica hops
  7. Take off the boil and crash cool pot in an ice bath until it reaches approx. 20˚C
  8. Sanitise your fermenter and a fine sieve
  9. Pour contents of the pot through the fine sieve into the fermenter
  10. Top up fermenter with cold sanitary water
  11. Add yeast to the wort directly (or hydrate yeast – see yeast booklet)
  12. Ferment for 7 days (at 18-20˚C) or until the gravity has been stable for 48 hours
  13. Add 25g of each of Styrian Goldings, Motueka and Pacifica hops to the fermenter for 5 days
  14. Bottle or keg as usual and after 2 weeks enjoy on a sunny afternoon on the deck or a rainy day on the couch!
